Saw an electric (under sink) water heater that was not vented to the outside of the trailer. The generator has to be running in order to heat the water; I believe it is a six gallon size. I can't find this heater anywhere--it isn't an Atwood or Suburban. Has blue foam as an outer cover. Does anyone know what brand it could be? I really do not want to install propane/lines/tanks/CO2 monitor/anything else that goes along with gas heaters. I want simple but do not want an on-demand type.

You can find several different styles and types at Home Depot, Lowes, etc. or local plumbing supply houses. Besides physical dimensions, make sure to look at amp draw. Check on you generator KW to make sure you don't overload it.
